USE OF OILFLOWER SEEDS AND HEMP IN THE FOOD INDUSTRY

Abstract

The article investigates topical issues of using flaxseed oil and hemp in food production. It is established that the consumption of flaxseed and flaxseed and hemp oil has recently become relevant. The influence of seeds on the human body and the main directions of use in the food industry are investigated. The aim of the article is to analyze the use of oilseed flax and hemp seeds in the food industry. Based on research, it is established that a balanced and nutritious diet is necessary for full development and human life, especially in modern conditions, characterized by the development of the chemical industry, when the nutritional value and quality of many foods is questionable, so the use of food industry products that contain a significant amount of biologically active substances that have medicinal properties. The paper presents the results of research on the use of flaxseed oil and hemp for the manufacture of food products for various functional purposes, the impact of phytochemical components on the quality of the products, as well as their impact on human health. Flax and hemp seeds are very popular today as a dietary supplement. It is established that the use of flax seeds of oil and technical hemp in the food industry is associated with a therapeutic effect, namely the presence in their composition of lignans having a wide range of biological activity with antibacterial, antiviral and antifungal effect, in addition, polyunsaturated fatty acids are soluble dietary fiber, they are called the elixir of youth.
