ANALYSIS OF THE STATE OF THE RAW MATERIAL BASE MEAT PROCESSING INDUSTRY

Abstract

The article presents the problem that the meat industry is the largest branch of the food industry, producing a wide range of food, technical and medical products, but the existing technologies need to be improved. The purpose of this work is to analyze the raw material base of the meat processing industry. The literature review shows that the meat industry, like all food industries, experienced some difficulties during the transition period, which led to a sharp decline in production. The technical equipment and capacity of the enterprises, the raw material base for the functioning of the meat industry are partially considered. The reason for the decline in production and under what conditions will contribute to the development of this industry. According to statistics, it is calculated how much meat is provided to the population of Ukraine in certain years. The study found out the reason why the number of pigs decreased, why the number of agricultural enterprises decreased and the number of farms increased. The dynamics and domestic market of pork are considered. The development of poultry farming in Ukraine has been studied, and it has been found out that today the population is fully provided with Ukrainian chicken eggs. The dynamics of chicken by years in Ukraine is considered. An increase in turkey meat was detected. Demand remains high and continues to grow because it is dietary due to its low fat content. It was found that rabbit is also a dietary meat, 21% protein and 90% digestible, rabbit fat more than chicken, but the amount of cholesterol is much lower, more saturated with polyunsaturated fatty acids, vitamins and minerals, and almost no one is allergic to it. Consumption of meat, namely chicken, pork, beef and other per capita in Ukraine has been established. The rating (top 10) of the largest meat producers in Ukraine was analyzed. It is concluded that the situation can be improved by obtaining additional quotas for Ukrainian meat at the European level, then the country will be able to develop the market and increase exports of meat products.
